Pear Pancakes with Cinnamon {Breakfast Recipe}

Every morning we wake up and decide what to have for breakfast. Sometimes it's eggs, sometimes it's yogurts and berries, and sometimes it's cereal. But every once in a while we get a special treat.

Pancakes!

Now, it's not that pancakes are hard to make. Or that they're labor intensive. We just don't eat them all the time. So when we do, we make them special. And I have to admit, when I run out of my Alton Brown pancake mix, I grab a box mix.

But I don't leave it at that! We spice up our pancakes with the fruit and spices we have on hand and make them extra special and nutritious. When my kids were small I would add different purees into their pancake mix but now that they're older we like to dice up our fruit before adding it in.

And here's how we do it:

Pear Pancakes with Cinnamon
  • 1 cup Trader Joe's multigrain pancake mix
  • 1/2 cup milk
  • 1 egg
  • 1/4 pear
  • 1 tsp cinnamon

1. Dice up the pear into small pieces.

2. Mix together the pancake mix, milk, and egg with a whisk until just incorporated. Do not over-mix.

3. Add in the diced pear and cinnamon. Fold in gently.

4. Let pancake batter sit while you prep the pan. Heat pan on medium heat.

5. Coat pan with butter. Take a towel and wipe off the excess batter (thanks, Alton, for that tip!)

6. Using a measuring cup, pour 1/4 to 1/3 of the batter onto the hot pan.

7. Let cook until batter is bubbling and edges look firm and underside is golden brown, about 1 1/2 to 2 minutes. Flip.

8. Let the other side cook until golden brown, about 2-3 minutes.

9. Repeat with the rest of the batter. If making large batches, store cooked pancakes in a warm oven (I set mine on the lowest setting and place pancakes on a plate with a towel on top to keep warm while I finish the rest of the batches).

10. Enjoy!

Makes 6 pancakes

Pancakes are so easy and versatile! Why stick with the same old plain pancakes when you can jazz them up? Switch up apples for pears and add some peanut butter on top and you have a tasty, and healthy meal perfect for this Fall!

All in the Family with Alexander Lacey and Ringling Bros

The circus has come to town! And boy was it amazing. I hadn't gone to the Ringling Bros. and Barnum & Bailey® circus since I was a kid and I had fond memories of cotton candy, spinning light toys, and entertainment. Not much has changed although seeing it all through my children's eyes was amazing.

Ringling Bros. and Barnum & Bailey® is all about the family experience. Not only do they have an amazing show geared towards all ages, they also have a pre-show where you can come with your family to get an up close look at the animals. You can see the elephants, tigers, lions, goats, horses, llamas, and ponies right in front of you before they get in the center ring to perform.

Ringling Bros Big Cat Trainer, Alexander Lacey, took a few moments along with his daughter, Katrina, to talk about the cats in the show and how they work with these amazing animals. We were lucky enough to get an up close and personal glance at exactly how amazing these trained cats are.

Lacey showed us his fine tuned skills working with the cats by heading into the tiger cage with a 5 gallon bucket of human-grade steak and two sticks. What he was able to make miss Bella (tiger in the photos below) do with just those three items was rather amazing!

Before heading into the cage, Lacey asked his daughter to help him. She had the big task of bringing him the large tub of meat once he was situated in the tigers' cage. Since he, of course, didn't want to turn his back on these big cats for one moment, she was able to help hand over the meat once he was safely inside.

The cats were very aware of the meat and what the sticks meant. We learned that through training the tigers with the sticks, a form of sign language is used. Each stick in each hand means something different whether it be to go up or down, left or right, etc. Just as I've taught my kids sign language, the cats are taught at a young age, around 4 months old.

Once Lacey was in the cage he moved rather swiftly to place each of the cats he was not going to work with in a separate caged area so that only one cat was in the cage he was in. Once Bella was the only tiger left he got to work quickly showing how he used the sticks, treated her with the steak (which is the same stuff delivered to the local hotels!), and talked to us about what he was doing the whole time.

It was so interesting to watch his bond with these animals. It was as if his every sense was on alert the whole time while his body and reactions let off a sense of serene and calmness at the same time. There was definitely a mutual respect between the cat and Lacey.

The most awe-inspiring moment through the presentation was when Lacey not once, but twice, leaned in for a kiss with this big cat! Amazing!

After we saw exactly how these big cats were trained we were able to ask some questions of our own.

And I was delighted to see that my little boy had his hand proudly, and patiently, raised up high waiting for his moment in the spotlight. Finally when it was his turn he asked, "Cats eat in the morning?" and Lacey confirmed that yes, as he had discussed before in the presentation, the big cats are fed up to 16 pounds each of the best beef steaks, livers, and hearts every day in the early morning.

Because the cats digest the meat while they sleep, they need to eat first thing in the morning so that everything is digested by showtime (Bella is not yet in the show so she could snack all she wanted during the presentation).

We also learned that big cats are rather lazy, sleeping an upwards of 22 hours during the day! Sound familiar? My cats growing up seemed to do the exact same thing! As does my dog. Ahh... the life of a cat.

But just because these large animals seem lazy doesn't mean their senses don't need to be constantly heightened and challenged. Each city brings on new smells, sights, and people! So every week these animals are in a different environment to keep them on their toes.

The position of the other animals around them also helps. By having the elephants to the north east and the horses and other small animals to the south west the lions and tigers are getting a constant sniff (as are the other animals) of those around them.

And through the interactive toys left in their cages, there is also plenty of time to play and converse with heir fellow big cats. Bella was still wet from a little swim she had in their small pool. There were also branches and balls for more fun play!

We absolutely loved learning more about these beautiful big cats and hearing how Lacey works with them and trains them to become the stars they are.

To learn more and read all about the Lacey family check out the Ringling Bros website!

If you're looking for an amazing, family-friendly activity to do this weekend and are in the San Diego area, head on out to the circus for a fun-filled experience!

You will absolutely love the performance and I am sure will be in awe as I was at the skilled performers throughout the show.

Why Yes, My Son Is In Gymnastics {Creating Healthy Children}

This summer was a fun, and busy, one. We spend most of our time playing wiht our friends, exploring San Diego, and picking up a few new skills.

My son spent one day a week learning a few awesome moves in his gymnastics class. I was impressed and excited to see how quickly he picked up what the teacher showed him. And he had an amazing teacher!

What I wasn't expecting was the reaction I received from others when I told them he was in gymnastics. Now, I'm not talking about my friends or family members, but people I met at the park, or at a restaurant (don't ask me how we got on the subject... the lady sitting next to us was VERY nosy), or at the doctor's office.

While most people would simply say, "Oh, how fun!" others reacted with a distasteful, "Why?!"

Well... why not?

And that's what I'd respond with. Gymnastics is a great way, for boys and girls, to learn the basics of balancing, core strength, motor skills, and flexibility. And I love that my son can now build on these skills as he grows and learns new ones. Not to mention the fact that he was part of a social circle that helped promote physical activity instead of at home on the couch watching cartoons.

Doing an awesome somersault on his own

Here are a few ways that gymnastics skills can help aid in healthy development of kids:

Core Strength and Exercise
Exercise and proper training through gymnastics have a positive effect on a child’s cardiopulmonary/cardio respiratory status and bone mineral density, helping to reduce the risk of serious illnesses in adulthood, such as heart disease, osteoporosis, and diabetes. It can also reduce the chances of childhood obesity by aiding in body composition and the loss of body fat (the healthy way!).

Motor Skills
Gymnastics helps children build a range of motor and coordination skills, and assists in developing a good sense of body awareness.

A young child in gymnastics will learn how to use different parts of their body in difference ways. By participating in gymnastics children have more body awareness, control, and coordination, which can be beneficial to other physical activities, sports, and in everyday life.

Flexibility
Stretching exercises help improve flexibility, allowing muscles and joints to bend and move easily through their full range of motion as your children grow. Kids look for opportunities every day to stretch when they try to get a toy just out of reach, take off their shoes, or do a somersault.

By becoming more flexible, children are less likely to get injured while playing and can perform better at certain tasks and sports. Stretching and improving flexibility can also help alleviate growing pains.

Don't have time (or the budget) for gymnastics? You can encourage core strength in your kids through fun games and activities. Take a look at this awesome publication from USAGym I found for a few great ideas! I'll be using a few of them with the kids since my son started preschool and our busy schedule can no long allow for gymnastics classes.

Remember to be a role model for your child. If you are active, your child will be active. So get up, head outside, and start playing!

Healthy Eating for Kids {eBook Review}

I'm always looking for unique and creative recipes that my kids will enjoy eating, even though they're healthy recipes. When I heard about the opportunity to review the book, "Healthy Eating for Kids", I knew it was right up my alley. These recipes have fun names to appeal to your child's imagination - let your kids tuck into an Edible Forest, devour a Happy Face Snack or dream of turning green when they drink a Hulk Juice.

"Healthy Eating for Kids" was written with the busy family in mind. Most recipes can be prepared in 15 minutes or less, which is less time than you might spend waiting in line for a hamburger and fries.

The recipes in "Healthy Eating" also come in kid-sized portions. If your child is a picky eater and refuses to eat the dinner that you are preparing for the rest of the family, you will be able to whip up a healthy alternative in minutes. On the other hand, if you would like to make a "Healthy Eating" recipe for the whole family, it is simple to do, since it is far easier to multiply the recipe than it is to sort out the portions for just one person.

The book includes 60 fun and healthy recipes in six different categories, including:
  • Snacks
  • Drinks
  • Lunch at Home
  • Packed Lunches for School
  • Evening Meals at Home
  • Desserts
Each recipe is designed to include the vitamins, minerals, and macronutrients that your child needs to stay healthy, strong, focused, and energetic. We've put an emphasis on ideas that:
  • Are healthy
  • Contain nutrients that are difficult to add to a child's diet
  • Fast and easy for parents to make
  • Use ingredients that most households have on hand
  • Encourage your child to get involved with his or her own nutrition
My son's new favorite snack is one of my favorites from childhood, Ants on a Log. However he prefers to use cranberries instead of raisins. The best part about most of these recipes is that your child can help make the snack with you. My son is in charge of spreading the peanut butter with a spoon and placing the cranberries on top (oh, and he's in charge of the eating too!). My daughter has fallen in love with the applesauce with cinnamon tortilla dippers. She helps sprinkle the cinnamon on the tortillas before we put them in the oven to bake and crisp up. We've substituted whole wheat tortillas and sometimes use pear sauce and apple-carrot sauce as well.

If you are looking for an awesome recipe book to entice your children to eat healthier then I highly suggest checking out Healthy Eating for Kids. You can purchase and download it in PDF format on the Healthy Eating for Kids website or directly from Amazon for your Kindle here.

Sign4Baby Turns 4 {KidVentures Review}

Molly loved watching Signing Storytime
This past Friday I headed over to Kid Ventures to celebrate with Sign4Baby as they turned 4. We were a bit late to the party due to a busy morning and a napping M but when we arrived we quickly found that we hadn't missed a thing! We met up with our new friend Elodie and her mom, Kari. We met them during our first 6 weeks of sign language class and the girls are almost the same age (Elodie is a month younger).

I had never been to Kid Ventures before but have gone to similar type places around town. The first thing I noticed when I walked in was the layout of the location. There was an eating area in the center of the room and a KV snack area to the left. To the right there were two strutures that can't be missed. A huge castle and pirate ship! Kids were laughing and smiling all around me as they ran in the castle and slid down the slide attached.
The cafe and layout of the rooms
We found a seat right away because signing story time was starting.

The theme for this month's signing story time is Sea Life so Joann cleverly went with a Celebrate The Sea theme. We listened to a Hullabaloo song about the sea and then Joann read an adorable book by Karen Katz called Where's Baby's Beach Ball? Since we read Where's Baby's Belly Button? to M already she was very interested in the story.

Throughout signing story time Joann signed along with the book and the music. The children were very interested in watching her through the whole thing and would get excited when they heard or saw something they recognized. M stayed pretty interested in the signing but after a little it she wanted to explore. She loved all of the friendly faces around her and felt right at home with the fun energy that came with a room full of excited children.

Sign4Baby's Signing Storytime
As we explored we found out that there is a police department, grocery store, fire department, disco room, nursery, restaurant, library and art store in addition to the cool castle and pirate ship.Wow! And each room is completed with outfits, toys and activities for the kids to partake in. I know how much my two year old is into pretend right now and these different rooms would just make his day.

After a very fun storytime and scavenger hunt a raffle was held for those who chose to purchase raffle tickets. All of the proceeds for the raffle went to the San Diego Center for Children. There were many prizes being raffled off. Some of them included the following:
M's friend, Elodie, was lucky enough to win one of the 3M Shoot n Share camcorder projectors plus lots of other great prizes. And I was lucky enough to win a 30 minute facial with Karen of Firefly Wellness. This mama needs some relaxation! I'm sure you'll be seeing a review of my experience at Firefly Wellness in the near future.

Pickle and the KV Pirate
The great part about Kid Ventures is that even though it was a packed house I never felt crowded. Their layout gives kids the room to play together or independently without having to play on top of one another. I know that my son will love this place the next time we go! And I'm definitely considering using Kid Ventures as a venue for his next birthday party. With all of the fun we had at Joann's party I know that our friends and family would have an equally great time at this place.

The only drawback I found was that there wasn't a labeling or numbering system where you child and you have identification to prove that you belong to one another. I don't make it a habit to take my eyes off my kids but if there was a distraction I wouldn't want my kid to walk out with another family. Because I know my son would do this :)

Here's some more information on Kid Ventures
  • Kid Ventures is a socks only facility (this includes babies)
  • They have two San Diego locations — Pacific Beach & Eastlake
  • They have drop-in times, camps and classes where parents and children can participate together
  • The Parents’ Cafe has a selection of drinks, salads and sandwiches available for purchase, and the seating area is within a few “footfalls” from where their children are playing
  • Adults must stay with their children, as they are not a child care or child services facility
  • And the best part... Sign4Baby will be offering their sign language classes at this location soon!
If you are looking for a fun, kid-safe place to go with your kids I highly recommend checking out Kid Ventures at either their Eastlake or Pacific Beach location. And remember to bring socks!

Molly and her buddie, Elodie

*** Disclaimer: In exchange for this blog post I was offered free admission to the event (but didn't have to use it since non-walking babies are free) and 6 raffle tickets to enter the drawing. This in no way altered my opinion of Sign4Baby or Kid Ventures ***
